Arugula Salad


This light refreshing salad is the perfect combination of bitter arugula, sweet honey, sour lemon and salty cheese. It’s a definite favourite in our house!  



Ingredients

- 4 cups fresh arugula

- 2 tablespoons extra virgin olive oil

- 1 tablespoon fresh lemon juice

- 2 tsp honey

- Salt to taste (about 1/4 teaspoon)

- Freshly ground black pepper to taste

- ½ cup shaved Parmesan cheese

- ¼ cup toasted pine nuts or walnuts 


Instructions


-In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and freshly ground black pepper until well combined.

-In a dry pan toast the pine nuts/walnuts until fragrant and slightly brown. Be careful, they go from perfectly cooked to overcooked quickly. 

-Place the arugula in a large salad bowl. Drizzle the dressing over the arugula and toss gently to coat the leaves evenly.

-Sprinkle the shaved Parmesan cheese and nuts over the top of the salad.

-Serve immediately
