Cheesy Beer Bread

This recipe was borne out of necessity during the Spring of 2020 when we were in the midst of Covid-19 lockdown, bread making became North America’s favourite pastime and yeast was as elusive as Bigfoot. Although I didn’t have yeast, I did have another ingredient that would lend itself to the creation of this decadent yet simple recipe. What was this magic ingredient? Well I’m glad you asked, beer!
Ingredients
3 c flour
3 tsp baking powder
1 tsp salt
1/4 c sugar
1 tall boy (16 oz) of beer
1/3 c melted butter
1 1/2 c cheese (I used smoked cheddar, divided between in the dough and on top of the bread. I think you could use more if you wanted it to be really cheesy inside)
Directions
Mix dry ingredients together. Add beer and cheese and stir to combine. Pour into a greased loaf pan. Pour butter over top and top with some of the cheese. Bake at 375 degrees for one hour. Check at the 30 and 45 minute marks and cover with tinfoil if the top starts to look too brown.
