This quick and easy salad is an easy recipe that will keep you full for hours. You can easily add other vegetables or grains like rice or quinoa to make it a full meal, which I often do for lunches.
2, 540ml cans of chickpeas, drained and rinsed
1, 350ml can of sliced black olives, drained
½ small red onion, chopped
1 clove garlic, minced
⅓ c olive oil
3 tbsp red wine vinegar
Salt, pepper and chopped parsley
Combine all ingredients and store in the fridge.
