Cranberry Orange French Toast Bake

If you’re a French toast lover, get ready because this delicious and easy French toast bake is going to become your next addiction. With a crispy top, soft interior and just the right amount of sweetness, this dish will surely have you coming back for seconds.


Ingredients

1 large loaf of challah or brioche bread

3 eggs

1c of canned coconut milk

3/4c dried cranberries

8 tbsp melted butter

3 tbsp brown sugar

2 tbsp brandy or Grand Marnier

2 tbsp pure maple syrup and additional for serving

1 tbsp vanilla extract

1 1/2 tsp cinnamon

½ tsp salt

Zest of 1 orange


Directions

Preheat the oven to 375 F. Slice bread into 1 inch cubes and place into a large buttered baking dish. In a bowl, whisk together eggs, coconut milk, butter, brown sugar, grand marnier/brandy, maple syrup, vanilla, cinnamon, salt and orange zest. Pour the mixture over the bread and mix until all pieces of bread have absorbed some of the liquid. Add dried cranberries and mix until evenly distributed. Bake for 30 minutes or until the top is crisp checking. Check occasionally and if the top begins to brown too quickly, cover with foil. Serve topped with additional maple syrup.
