Curried Chickpea Salad

This Curried Chickpea Salad is a vibrant, flavor-packed dish that comes together in minutes and makes a perfect lunch, side, or meal prep staple. Creamy Greek yogurt, crunchy veggies, and sweet raisins bring balance to the warm, aromatic curry spice, making every bite a satisfying one.

Ingredients

2, 19 oz can chickpeas (drained)

1/4 c Greek yogurt

1/4 c mayonnaise

1/3 c red onion, diced

1/3 c pickles, diced

1/3 c celery, diced

1/3 c raisins

2 tbsp fresh parsley, chopped (and more

for garnish)

1 Tbsp Curry Powder

2 Tbsp honey mustard (or 1 Tbsp honey and 1 Tbsp regular or Dijon mustard)

Salt and pepper (to taste)


Directions

Combine all ingredients and mix well. Garnish with additional parsley.


Alternately, you can also mash the chickpeas prior to adding to the salad and use the mixture as a sandwich filling.
