Easy Linguine with Clam Sauce

This is an easy recipe that is perfect for entertaining and sure to delight guests who will think you went to far more trouble making it than you actually did. Not only is this recipe quick, (it’s ready in about 15 minutes) but it’s also easy on the wallet, making it a win in my books. 


Ingredients 


1, 410g package linguine 

1, 142g can of baby clams with liquid 

5 tbsp olive oil

3 shallots, diced 

5 cloves of garlic, diced 

¾ c dry white wine 

1/2c butter 

1/2c parsley, chopped 

Zest of one lemon 

1 tsp salt 

Pinch of crushed red pepper flakes 

Parmesan cheese, grated


Directions 


Cook pasta according to package instructions until al dente. 


While pasta is cooking, heat olive oil and butter in a pan and sauté shallots and garlic on medium heat until translucent.  Add clams and liquid, white wine, lemon zest, salt and pepper flakes. Cook until it has reduced by approximately half. Add parsley. 


Once cooked, combine sauce and pasta and serve topped with parmesan cheese and a bit of fresh parsley.
