This tasty and hearty soup is perfect for a fall or winter day! It’s also quick and easy to make, with the addition of frozen vegetables to add bulk and create a healthy meal.
Ingredients
-1 lb lean ground beef
-1 medium onion
-6c beef stock (or 6 c water and 6 tsp beef boullion)
-1, 796ml can diced tomatoes
-1c grated Parmesan cheese
-1/4c orzo
-1 1/2c frozen peas, corn and carrots
-1tbsp olive oil
-1 tsp oregano
-1 tsp thyme
Directions
In a large sauce pan, cook ground beef, then remove from pan and drain any excess oil. Cook onion in olive oil until softened. Add all remaining ingredients except parmesan cheese and bring to boil then reduce heat and simmer for 20 minutes or until orzo is cooked through and frozen veggies are warm. Add parmesan cheese before serving.
