Lemon Orzo Chicken Soup

This isn’t your grandma’s chicken soup! This lemon orzo soup recipe is the perfect mix of comforting, healthy and packed with flavour. It’s a favourite in our house and hopefully will become a new favourite for you as well.

Ingredients
1 tbsp olive oil
1 large onion, chopped
3 medium carrots, diced
3 ribs celery, diced
2 cloves garlic, minced
6 c chicken broth
3 uncooked chicken breasts, chopped
2 c fresh spinach, chopped (or you can use frozen)
3/4 c uncooked orzo (or substitute for rice for a gluten-free option)
Juice of 1 lemon
1 tsp lemon zest
1 tsp dried thyme
½ tsp dried oregano
½ tsp turmeric
Salt and pepper (to taste)
Chopped fresh parsley (optional)
Directions
Saute the onion, carrot, celery and garlic in olive oil over medium heat for about 5 minutes or until softened. Add thyme, turmeric, oregano, broth, chicken, spinach and lemon juice and zest. Bring to a boil and then add orzo, reduce, cover and cook for 20 minutes. Add salt, pepper and parsley to taste.
