Lemon Tahini Sauce

This fresh, zesty lemon tahini dressing is delicious poured over your favourite salad, used as a dip for vegetables or as a sauce for roasted veggies or meat. I particularly like it with falafel. The options for how you use this sauce are truly endless. 



Ingredients


- 1/4 cup tahini

- 1/3 cup fresh lemon juice

- 1–2 tablespoons olive oil

- 1–2 tablespoons water (to thin)

- 1/2 clove garlic, minced

- 2 tbsp chopped parsley 

- ½ tsp cumin

- Salt to taste

- Lemon zest (optional)

- 1 tsp. honey (optional)


Instructions


-Start by juicing the lemon and mincing the garlic.

-In a medium-sized bowl, whisk together the tahini and lemon juice. The mixture may thicken at first, but keep stirring until it becomes smooth and creamy.

-Gradually whisk in the olive oil and water, one tablespoon at a time, until the dressing reaches your desired consistency. You can add more water if you prefer a thinner dressing.

-Add the minced garlic, parsley, cumin and season with salt and pepper to taste. Whisk until everything is well combined.

-Taste the dressing and adjust the seasoning as needed. You can add grated lemon rind for extra tanginess or a touch of honey for sweetness.

-Store any leftovers in an airtight container in the refrigerator for up to a week. Shake or stir before using again, as the dressing may thicken in the fridge.
