This recipe is an easy, no-bake dessert that is great when you want a little something sweet after a meal, as an addition to a cookie tray or as a snack. Gluten-free and also easily adapted to be made dairy free, this recipe can be made with walnuts or pecans (the pecan version is my favourite but a bit more costly). It is also easily customizable, you can roll them in more chopped nuts, coconut, or a combination of the two. I hope you enjoy these little bites of sweetness as much as I do.

Ingredients
-4 tbsp butter (or vegan substitute)
-1 c honey
-3 tbsp vanilla
-½ tsp salt
-3 c pecans or walnuts, chopped
-2 ½ c pecans or walnuts ground in food processor (or substitute coconut for all/some of the nuts)
Directions
Bring the butter, honey, vanilla and ½ tsp salt to a boil, then reduce heat and simmer for 15 minutes. Stir in 3 cups of chopped nuts and simmer for 5 more minutes. Once cool enough to handle (I am impatient and usually put the mixture in the fridge or freezer for a few minutes), roll into balls, then roll the balls in the ground nut/salt/coconut mixture. If you don’t eat them all at once, these keep well stored in the fridge for 10 days, or longer if kept in the freezer.
